2011 June 5 - Chicken Mushroom Soup
This is a very easy Chinese Chicken - Mushroom Soup.
What you need are:
1. Whole Chicken (I used Tyson Premium Cornish Hen from Rainbow.)
2. Rice Cooking Wine* (2 tbs) - optional
3. Chinese Mushroom (15-25)
4. Ginger (4-5 slices)
5. Scallion (1)
6. Star Anise* (1) - optional
7. Sichuan Pepper* (1 tsp) - optional
8. Salt (2 tsp) - This could be more or less depends on your taste.
9. White Pepper Powder* (1 tsp) - optional
Here are the steps:
a) Bring water in a stockpot to boil.
b) Put the Whole Chicken in, together with the Rice Cooking Wine*. Let it boil for about 5 minutes.
c) Drain the water and wash the Chicken clean.
d) Cut the Scallion into 2 inches pieces
e) Wash the Chinese Mushroom.
f) Stuff the Chicken with half of the Scallion pieces, Ginger pieces and Chinese Mushroom.
g) Put the stuffed Chicken, add Salt and rest of the ingredients (Scallion, Ginger, Star Anise*, Sichuan Pepper*, Chinese Mushroom) into the stockpot. Turn the cooktop to HIGH and wait for the water to boil.
h) Once the water starts to boil, bring it down to Medium and let is cook for 30-45 minutes.
i) Taste the soup (add more Salt or water if needed).
j) You can also add the White Pepper Powder* if you like.
